FOR BEST RESULTS
Fill a 6 inch diameter or larger, pot with moistened planting mix. Sprinkle seeds 1/4 inch apart over the surface, cover 1/2 inch deep with mix, and water gently. Keep pot moist but not soggy, and be sure to provide a good light source. The pot of grasses can be kept indoors for pets to graze on at their leisure. Fertilize every 2 weeks using a non-chemical fertilizer, such as fish emulsion.
GROWING NOTES
Our ample packet provides enough seed for 3 to 4 sowings. The grasses are ready for pets to nibble when the blades are at least a few inches tall, normally in about 10-14 days after sowing. If grasses get too tall and fall over, “mow” them down to 3-4 inches with a pair of scissors. For a constant supply, try sowing a pot every 2 weeks. Give your pet access to only one pot of grass at a time, and switch pots each week. When grass does not re-grow vigorously after cutting down and fertilizing, discard and start again with new seed and soil mix.
DINING IDEAS
Most cats will recognize the grass as a treat right away. To encourage finicky eaters, place the pot beside the kitty’s food and spritz it with water. This usually does the trick and cats who newly discover this treat delight in it!

Cilantro – Santo Long Standing – West Coast Seeds
$3.49oriandrum sativum. Santo is a popular home garden and commercial variety for all-season sowing, Direct sow short rows of Santo every other week from spring to late summer for a continuous harvest. The mature seeds, better known as coriander, are easy to harvest, and used in many dishes – notably curry powder blends. Keep an eye on your cilantro crop as it is fast-growing. As soon as a central stem appears and the uppermost leaves become frilly, flowering is imminent. The roots are useful – check out our Coriander Root Paste recipe. Because of this taproot, cilantro does not transplant well.
If growing for seeds, simply allow the plants to flower. Cilantro flowers are highly attractive to beneficial insects like Syrphid flies, lacewings, and lady beetles. Be warned that if the seeds are not harvested when they are mature, you will have volunteer cilantro plants for years to come.
Cilantro will grow somewhat leggy, but productively in partial shade, and it is quite tolerant of cool temperatures. With the protection of a cloche greenhouse, cilantro will continue growing all winter.
How To Grow, Timing: Direct sow from just after the last frost date to late spring. Direct sow in the fall under cover for a winter crop. Optimal soil temperature for germination: 15°C. Seeds should sprout in 5-10 days.
How To Grow, Starting: Sow 2cm deep in short rows. Thin seedlings to stand 5-10cm apart if harvesting leaves. If growing for seed, allow 23cm between plants.
How To Grow, Growing: Cilantro is tricky because several factors can cause it to bolt. Avoid transplanting for this reason, and avoid hot conditions as well as too much moisture. It does best in light, well-drained soil in partial shade, in relatively dry conditions. This is easy to achieve beneath a cloche in winter, where cilantro will thrive. Once it blooms, the seeds ripen suddenly, in only a couple of days, so care should be taken to prevent self sowing or simply losing those useful seeds.
How To Grow, Harvest: Pick young leaves once they have reached about 10cm in height. The flavour, though intense when fresh, diminishes quickly when dried or cooked, so always add cilantro just before serving. Try freezing it in ice cube trays with water. The stems and roots are also full of flavour. Harvest the seeds by sticking 6 or 8 seed heads in a paper bag and hanging it up somewhere airy, away from direct sunlight. The bag will catch the seeds as they ripen and fall out.

Thyme – English Thyme – West Coast Seeds
$3.49Thymus vulgaris. This woody little evergreen plant spreads steadily over the years and has pretty pink flowers which bees love. Winter Thyme plants grow to a height of 30cm (12″). Wonderful in Mediterranean cuisine, teas, potpourri and a key ingredient of bouquet garni. Thyme dries well, too – cut sprigs and tie them with thread for hanging out of direct sunlight. They remove the brittle leaves from the stalks and store them in a cool, dry, unlit place. Plants do well in containers, and they’re drought tolerant, so consider them for xeriscaping. Cut thyme back by a third at the end of the season to encourage lots of spring growth and flower set. Perennial.
How To Grow, Timing: Sow indoors late winter to mid-spring. Transplant out once soil begins to warm, or direct sow late May through June. Ideal soil temperature for germination: 15-21°C.
How To Grow, Starting: Sow the dust-like seeds on the surface of dampened, sterilized seed starting mix under bright light with bottom heat. Keep watering to a minimum, as thyme seedlings are prone to damping off. When seedlings are large enough, harden them off and transplant to the garden or to containers, spacing them at 23-38cm apart.
How To Grow, Growing: Trim plants back after flowering to encourage bushy growth. Protect container-grown plants from cold as winter approaches, and water only as necessary. Damp, cold soil will kill thyme.

Garlic Chives – Allium Tuberosum – West Coast Seeds

Lavender – Dwarf Munstead – West Coast Seeds
$4.49Lavendula angustifolia. This open plant is an early flowering selection with more blue in the flowers. Dwarf Munstead lavender seeds are the most aromatic of the English lavenders, giving off a sweet and delicate perfume. It is great for drying, hung by itself or with other tiny flowers. Dwarf Munstead works well in containers or raised beds, and will reward the grower with masses of aromatic cut flowers that can be easily dried. Lavender flowers are edible, and highly attractive to pollinators. Sow some Dwarf Munstead Lavender seeds in your organic herb or vegetable garden this year. Plant height: 38cm.
How To Grow, Timing: Lavender germinates most evenly if seeds can be collected in the autumn and sown on the surface of a seed tray with bottom heat maintaining 4-10°C. The seedlings are then overwintered in a cool greenhouse or cold frame with good ventilation. Seedlings can then be potted on as needed.
Another method is to start the seeds indoors in winter, planting a few seeds in a few pots with sterilized seed starting mix. Dampen the mix, press the seeds into the surface, insert the pots into plastic bags, and put them in the freezer for about a week. Let them come to room temperature on their own, and then use bottom heat as indicated above.
How To Grow, Starting: Avoid using a plastic lid or covering, as this will keep the soil more moist than needed. Barely cover the seed, as they germinates in 14-21 days in warm soil. Do not use a plastic lid or covering because this will make the surface of the soil too moist. If watering is necessary, water from below. If germination is low after 3-4 weeks, lower the temperature to 5-10°C for 2 weeks, then raise it again. Pot up the tiny seedlings and grow them on in a protected greenhouse or windowsill to set into the garden in the spring.
How To Grow, Growing: Lavender prefers full sun and well drained, fertile soil. Trim plants back hard in spring, just as new growth starts – but never prune back into the woody part of the stems. This will give a rush of even growth for the first leaves and bloom. Cut back again in early autumn, but again – never into old wood.
How To Grow, Harvest: Gather the flowers just as they open. Dry on open trays, or by hanging in small bunches. Pick the leaves anytime to use fresh, or if dehydrating lavender leaves, gather before flowering starts.

Rosemary – Rosmarinus Officinalis – West Coast Seeds
$4.49Salvia rosmarinus. Rosemary has stiff stems with crisp, fir-like leaves and a strong, rich aroma. Dried leaves release more flavour if freshly crushed. Plant in full sun in the garden or a big container. This is one of the woody stemmed perennial herbs, and in the right spot, plants can become large and shrubby. If growing Rosemary seeds in containers, protect the plants from severe winter weather by taking them into a protected area like a garage or garden shed. The flowers of this oil rich herb are fragrant and very attractive to honeybees and other wild pollinators.
To harvest, cut entire branches from the plant, and dry indoors, hanging upside down in some airy place free from direct sunlight. Once dry, the leaves can be pulled off and stored in sealed containers. They remain aromatic for many months.
How To Grow, Timing: Sow indoors from late winter to early spring. Transplant once soil has warmed. Direct sowing in late spring may work, but starting indoors is more reliable. Use bottom heat to maintain an optimal soil temperature of 27-32°C (80-90°F).
How To Grow, Starting: Most nurseries grow rosemary from cuttings, as germination is notoriously low, so plant more seeds than needed. Sow them barely covered with sterilized seed starting mix over bottom heat. Once germinated, rosemary is highly prone to damping off, so keep watering to a minimum, provide bright light, and ventilation. Keep each plant in its own pot for the first winter and offer them protection from severe cold. Transplant to the garden the following spring at a spacing of 60-90cm (24-36″).
How To Grow, Growing: If growing rosemary in containers, provide monthly feedings of liquid fertilizer. Keep watered in hot weather. Mulch around all rosemary plants as cold weather approaches. If their roots freeze in times of hard frost, the plants will die.

Wild Bergamot – West Coast Seeds
$3.49Monarda fistulosa. Commonly known as Bee Balm, Wild Bergamot is a wildflower that produces blooms that vary in shades from pink to lavender. These flowers appear in July and August above stout, strong stems bearing scented leaves. Wild Bergamont is unrelated to the bergamot citrus fruit that lend Earl Grey tea its distinct flavour, but the leaves are excellent in tea, with peppery/lemony/minty notes. Plants grow to a height of 60-90cm, and those that don’t survive as perennials in Coastal gardens will likely self-sow. All bergamots are highly attractive to beneficial pollinators like butterflies and wild bees. Hummingbirds will stage territorial fights to stake their claims over a wild bergamot plant in full bloom.
How To Grow, Timing: Sow indoors 6-8 weeks before the last frost, or direct sow in early spring when a light frost is still possible. Seeds can also be direct sown in the fall, as the first frost approaches. Optimal soil temperature for germination: 15-21°C. Seeds should sprout in 10-40 days. Bottom heat will speed germination.

Cilantro – Calypso – West Coast Seeds

Parsley – Forest Green – West Coast Seeds

Dill – Dukat Dill – West Coast Seeds.

Dukat is the variety to grow for homemade dill pickles, and can be grown in a large container in full sun. This dill stays relatively short at 45-60cm.
The structure of dill’s flowers is known as an umbel. Thus dill is considered an umbelliferous plant. Other umbellifers include carrots, cilantro, fennel, parsnips, and Ammi. Lemongrass – Cymbopogon Citratus – West Coast Seeds

Parsley – Dark Green Italian – West Coast Seeds

Shiso – Red Perilla – West Coast Seeds
$4.49Perilla frutescens var. crispa. Red Perilla shiso seeds grow into substantial plants with wide, deep purple leaves. The dark ruby leaves of this sharply flavoured Asian herb have nicely frilled edges. They look a little bit like stinging nettle leaves, but rounder, and without any prickles. Grow as a bright-red micro-green, or let the plants mature and enjoy the leaves in pho, salad rolls, or other dishes. Sage – Ceres – West Coast Seeds
$4.49Salvia officinalis. CERTIFIED ORGANIC! The wonderfully aromatic, silvery-green leaves of sage bring a potent savoury accent to stews, soups, salads, and traditional stuffing. Beneficial insects love this plant and hummingbirds will feed from sage flowers. Direct seed organic sage seeds in early spring and thin to 30cm apart. Harvest half of the plant before the purple flowers open in June, and dry the leaves in an airy spot away from direct sunlight. Summer Savory – Satureja Hortensis – West Coast Seeds
$3.29Satureja hortensis. This delicate, aromatic little plant grows quickly in rich soil. Used in bean, pea and lentil recipes, summer savory has a more delicate flavour than winter savory. Sow Summer Savory seeds in the spring. After flowering, pull it up and hang to dry. Let a few plants go to seed, and it should come back the following year. This herb grows to 25cm (10″) tall.
This is the better known savory – it is an annual plant as opposed to perennial Winter Savory. Maritime Canadians know and love it, and use it the way sage is used elsewhere. It’s nice with poultry stuffing and stews, and it is a key ingredient in herbes de Provence.

Basil – Siam Queen – West Coast Seeds
$3.99Ocimum basilicum var. thyrsiflora. Siam Queen Thai basil seeds are the authentic heirloom basil variety that is native to southeast Asia. Known as horapha in Thai, and húng quế in Vietnamese. Highly regarded for its distinctive, spicy flavour. Vigorous, highly ornamental plants with purple stalks and flowers that open to pink, providing a nice contrast to its dark green leaves. This variety is particularly productive in hot weather or in a greenhouse, and will thrive in the Okanagan and in southern Ontario. It performs well in containers, but don’t let it dry out. How To Grow, Harvest: Frequent harvesting will prolong the life of the plant. Basil leaves have the best flavour just before the plant flowers, and if you plan to preserve some of your basil or make a big batch of pesto, this is the best time to harvest. Flowering can be delayed by pinching or clipping off new flower buds.
Tear basil rather than chop with a knife because chopping tends to bruise the leaves. Add basil to food just before serving so as to get the full aroma and effect. Cooking for any length tends to make the minty side of basil come to the forefront.
Basil is best fresh, but can be preserved by drying or by freezing. To freeze, tear the leaves into small pieces and freeze small batches of them, with water, in ice cube trays.
