Thyme – English Thyme – West Coast Seeds
$3.49Thymus vulgaris. This woody little evergreen plant spreads steadily over the years and has pretty pink flowers which bees love. Winter Thyme plants grow to a height of 30cm (12″). Wonderful in Mediterranean cuisine, teas, potpourri and a key ingredient of bouquet garni. Thyme dries well, too – cut sprigs and tie them with thread for hanging out of direct sunlight. They remove the brittle leaves from the stalks and store them in a cool, dry, unlit place. Plants do well in containers, and they’re drought tolerant, so consider them for xeriscaping. Cut thyme back by a third at the end of the season to encourage lots of spring growth and flower set.

Peppermint – West Coast Seeds
$3.49Mentha x piperata. Hot, rich mint aroma issues from the crushed or dried leaves of this spreading perennial plant. Consider growing Peppermint seeds in containers, as it will become hard to control over the years. Both the leaves and flowers can be dried for teas or use in stews and sauces. Peppermint grows well in moist soil in full sun to heavy shade. Mint flowers are edible, and highly attractive to bees and other pollinators. Mint plants spread by an ever-expanding rhizome that grows parallel with the soil. Along its length, new stems emerge with new leaves and flowers. This is why many gardeners prefer to grow mint in containers than in the open soil.

Dill – Dukat – West Coast Seeds
$3.29Dukat dill seeds produce dill with a particularly fine bouquet and flavour. The darker-than-usual leaves are excellent fresh or dried. Dukat has exceptionally large seed heads. Dukat is the variety to grow for homemade dill pickles, and can be grown in a large container in full sun. This dill stays relatively short at 45-60cm (18-24″).
The structure of dill’s flowers is known as an umbel. Thus dill is considered an umbelliferous plant. Other umbellifers include carrots, cilantro, fennel, parsnips, and Ammi. All of these plants are attractive to predatory insects such as lady beetles, Syrphid flies (hover-flies), lacewings, and tiny parasitoid wasps. West Coast Seeds encourages organic gardeners to grow dill precisely to attract these beneficial insects, for they will control pest insects like aphids, thrips, whitefly, and the caterpillar of the Small White Butterfly (cabbage moth).

Chives – West Coast Seeds
$3.49Sow chive seeds at any time of year. Hardy, perennial, and easy to grow, the chopped stems and pink flowers add a fresh, mild green onion flavour to sandwiches, salads and baked potatoes. Clumps can be divided in spring or fall. If grown in containers, divide frequently enough to provide for constant lateral growth. Chives are surprisingly hardy and can be harvested all winter if given some protection from extreme cold. They are also quite drought tolerant, so they’re good candidates for xeriscaping. The variable, frilled, pink to white flowers appear from July to October atop stems that grow only 15cm (6″) tall. Try it in containers or raised beds. Dianthus is quite drought tolerant, so it is a good option for xeriscaping. This variety of Dianthus is easy to grow from seeds. Cucumbers – Cucamelon – West Coast Seeds

The plants are not quite as productive as cucumbers, but the fruits are amazingly cute and novel. They look like tiny watermelons, but have a very appealing cucumber flavour with slight citrus notes. Eat them fresh or pickle them for a crunchy treat. Harvest them at the 2cm (1″) size, before the seeds develop. This is a heat loving tropical plant that is most productive in hot weather or a greenhouse setting. Start the seeds indoors and treat as you would a conventional cucumber seedling.

The fruits are 20cm (8″) long with thin, shiny, dark skins, and crisp, sweet, flavourful flesh. The seeds are small in a tight seed cavity. Plants are very productive both outdoors and in the greenhouse, but were bred with open field growing in mind. Lots of fruits develop on each plant in one relatively concentrated set. They are suitable for pickling when picked immature, but they make fine slicers at full size.
